Garash cake

Garash is a type of cake very popular in Bulgarian cuisine. The name comes possibly from Hungarian. It is a very popular cake in Bulgarian patisseries and restaurants.

Three 3 mm-thin round cake plates are made from a batter consisting of ground walnut kernels and egg whites. After baking and cooling, they are arranged one on top of the other and frosted in between, on top, and on the sides with a frosting made of sour cream and bitter chocolate. Afterwards, the cake is covered with chocolate icing.
