Fuži

Fuži is a traditional Istrian pasta. The pasta dough is rolled out thin, and the 1 1/2 inch strips are cut and placed over each other. The strips are cut diagonally so that they are diamond shaped. Two ends of the diamonds are then folded over each other to meet in the middle and pinched together, making the fuži look like a bow. It is then generally served with a mild red, veal sauce, which is usually made out of onions, tomato paste, white wine and chicken broth.
