Elgin tablets

Elgin tablets are a Scottish sweet made from sugar, milk and butter. They are much like caramel or fudge.

  • 1 KG granulated sugar
  • 100g of butter
  • 1 Large tin of Carnation milk
  • pinch of cream of tartar

  1. Melt the ingredients into saucepan over a low heat.
  2. Bring to boil and boil hard for 15 mins.
  3. Grease Swiss roll tins.
  4. Pour the mixture into the tins and leave to set.
  5. Cut it into squares before it is completely cooled.
