Elgin tablets

Elgin tablets are a Scottish sweet made from sugar, milk and butter. They are much like caramel or fudge.

- 1 KG granulated sugar
- 100g of butter
- 1 Large tin of Carnation milk
- pinch of cream of tartar

- Large Saucepan
- 2 Swiss roll tins
[edit] Method
- Melt the ingredients into saucepan over a low heat.
- Bring to boil and boil hard for 15 mins.
- Grease Swiss roll tins.
- Pour the mixture into the tins and leave to set.
- Cut it into squares before it is completely cooled.
