The overwhelming majority of early Chinese immigrants to Hawaii came from southern China, and they were mainly Cantonese speakers. The spelling of his Chinese name suggests that Don Ho's family is Cantonese. Including Don Ho's Chinese name in Mandarin--a separate language that is mutually unintelligible with Cantonese--makes as much sense as giving the French equivalent of an Italian's name.
