Desem

Desem is a mature Flemish sourdough starter made from flour and water, inoculated by wild yeasts and bacteria. The starter is grown in a bed of whole wheat flour until it reaches sufficient maturity. Desem bread made from a mature desem is characterised by a strong rise, and a light and flavoursome, slightly sour taste.
