Crudités are traditional French appetizers comprised of grated raw vegetables soaked in a vinaigrette. The American version of this consists of cut fresh or blanched vegetables with food dip or sauces. Crudités often include carrot sticks, pepper strips, celery sticks, and asparagus spears.
