Cozido à portuguesa is one of the most traditional dishes of Portuguese cuisine with its in origins in Beira region. A rich stew made from the shin of beef ,pork and, in some regions, chicken served without the liquid and made from the boil of two kinds of cabbage, carrots, turnips, Portuguese smoked sausages (morcela, farinheira and chouriço), rice and potatoes.



Yield: 6 Servings

2 pounds Beef shin
½ pounds Bacon
1 Chicken
2 quart Boiling water
2 pounds Potatoes; pared
1 pounds Carrots; scraped
1 pounds Turnips; pared
1 large Cabbage; quartered
1 Smoked sausage; sliced
2 cup Rice

Add meat and bacon to water. Cover. Simmer for 2 Hours. Add vegetables. Simmer for 15 minutes. Add sausage. Simmer until vegetbales are tender. remove 4 1/2 cups broth from stew. Bring to boil. add Rice. Cover. Simmer for 30 minutes. Drain stew; Pour broth into soup bowls. Place meat on Platter. Surround with vegetables. Serve with rice. 6 servings. Suggested menu: Portuguese stew, escarole salad, garlic bread, peach cobbler, coffee or tea. Probably the best portugese cuisine ever.
