Cherry pie (dessert)

Cherry pie is a pie made with a cherry filling.
Morello cherries are often used for these. Cherries are expensive - and sweet varieties are best used eaten fresh and raw. Sour cherries are best for cooking and may be used fresh or preserved. If fresh, add a little extra sugar. Recipes are simple - if fresh, cook the cherries with sugar to taste until soft, then thicken with cornflour. Otherwise, empty the tinned cherries with syrup into a pot, heat, and thicken with cornflour before lining a pie dish with pastry and pouring in the filling. Very simple, but very good.
Although generally eaten in North America, Cherry Pies are also known in other parts of the Western World.
