Charlotte (dessert)

A Charlotte is a type of dessert. It is a molded tart filled with cooled custard or mousse, usually fruit-flavored (oftenapple, pear, or raspberry). The filling is often covered with a thin layer of similarly flavored gelatin. The crust lining is made with ladyfinger cookies or with sponge cake. This is the more modern type of frozen Charlotte.
The traditional old-fashioned type of Charlotte as made in the UK uses a fruit compote (usually made of apples or pears) as the filling, has a topping made from a breadcrumb and sugar mixture, and is baked.
