Changua

Changua (milk soup with eggs) is a typical breakfast soup of the central Andes region of Colombia, in particular in the Boyacá and Cundinamarca area, including the capital, Bogotá. The dish has Chibcha origins.

The soup is made by frying up scallions in a pot. An equal amount of water and milk are added to the pot with a dash of salt. Once it comes to a boil, one egg (or more) is cracked without breaking the yolk and allowed to cook for about a minute whilst covered. It is served in a soup bowl, and dressed with curly cilantro and a piece of stale bread which softens in the Changua. Add salt to taste.
