Carbomb (also known as "Belfast carbomb" or "Irish carbomb") is a boilermaker made with stout (for example Guinness), Irish cream (e.g. Baileys) and Irish whiskey (such as Jameson or Tullamore Dew).

The establishment in which this was developed is Michael's Pub in Columbia, an Irish-American bar. The drink was created by suggestion of patrons and the dedicated bartenders to create a drink that celebrated the theme of the bar with a similar drink/shooter.

  • Jimmy & Guinney - consists of a double shot of Jameson in a whiskey snifter glass dropped into a pint of Guinness stout.
  • Irish Train Wreck or Irish Truck Bomb - a larger version using a highball or old-fashioned whiskey glass dropped into a beer pitcher. This is usually shared between a group.
  • Irish Christmas - a seasonal variation where peppermint schnapps is substituted for Irish Cream liquor.
  • Tijuana Carbomb - an American Southwest version that features a shot of Tequila mixed with a pint of dark Mexican beer (e.g. Negra Modelo), followed by the addition of a shot of Kahlua.

In Episode 13 of 30 Rock ("Up All Night"), Jack Donaghy (played by Alec Baldwin) is at a bar with Tracy Jordan (played by Tracy Morgan). He celebrates his divorce from his now-ex-wife Bianca (Isabella Rossellini) by drinking several Carbombs. Jack closes the bar, leaving the table littered with empty glasses.
