Broa

Broa is a type of cornbread traditionally made in Portugal. As such, it represents a relatively unusual instance of maize being used in European cuisine. Unlike the cornbread typical of the southern United States, broa is made from a mixture of cornmeal and rye flour, and is leavened with yeast rather than baking powder or baking soda.

Ingredients: 1 kg of rye flour 2 kg of maize flour

Making process:

-Sieve and mix the two kind of flours; -thoroughly mix the flour with 1 litre of boiling water (broa will never be properly cooked if you ignore this step) -let the dough leaven (the more you let it leaven, the bigger and sour the dough will get) -cook it for about 3 hours in a very hot clay oven. It will be cooked as soon as you can't sunk a finger in the middle of the broa.
