Bindenfleisch

Bindenfleisch is an air dried meat that is produced in the Grisons region of Switzerland. Prior to drying the meat is treated with white wine and spices such as, salt, onion and assorted herbs. Served traditionally with oil and vinegar dressing. Also known as Bündnerfleisch and maybe related to French dish known as brési
