Banh canh

Banh canh (in Vietnamese: bánh canh) is a Vietnamese noodle made by a mixture of purified rice and tapioca powder. In banh canh soup, the noodle is combined with several soup bases, such as:

  • Banh canh cua: A rich, thick crab soup.
  • Banh canh bot loc: A more translucent version of the noodle.
  • Banh canh ca: The noodle is made by grounded fish, served with a spicy broth.
  • Banh canh trang bang: Banh canh made in Trang Bang town, served with boiled pork, rice paper and local herbs.
  • Banh canh tom: A shrimp flavoured broth that is also mixed with coconut milk.
