Avruga caviar

Avruga caviar is made from the roe of herring fished off the Spanish coast. Concern for the diminishing sturgeon population as a result of demand for the prized Beluga caviar has seen Avruga caviar quickly gain popularity as a more sustainable and cheaper alternative. Avruga caviar is pearlescent black in colour, with taste nuances supposedly similar to Beluga.
