Arroz a la valenciana

Arroz a la valenciana is a typical Nicaraguan dish and is referred to as the Latin version of Valencia, Spain's paella.[1][2]

The dish consists 1 pound of rice, chicken, chorizo, 2 ounces of butter, 1 onion, 1 red bell pepper, 2 tomatoes, a can of tomato paste, and at personal preference pepper, salt, and usually is prepared with Toña or Victoria beer, but any will do, along with white wine.[3]

To prepare the dish, first the chicken is cooked in sufficient water, then onions, red bell pepper and salt are added. When its finished the chicken is stripped and any bones are discarded. After comes the preparation of the rice where the chicken is then added and let to cook. Afterwords, in a frying pan, butter, onion, and red pepper is fried. Later the chicken and rice is added and mixed together along with sausage and the optional addition of beer or white wine.[4]
