The Guinness All-Ireland Senior Hurling Championship 2000 began in May and ended on September 10, 2000 when the All-Ireland Hurling Final was won by Kilkenny who beat Offaly by 5-15 to 1-14.

The format used for the 2000 Championship was the same format that was used in previous years. The defeated Leinster and Munster champions were not eliminated from the competition, instead they went on to join the Ulster champions and Galway in two "quarter-finals". The two winners from these two games qualified for the semi-finals where they were drawn against the Leinster and Munster winners. In 2000 Tipperary and Offaly were the two teams to benefit from this All-Ireland Qualifier system.

As a result of the introduction of the new Qualifier system in 1997 the All-Ireland finals of recent years had seen teams from the same province competing against each other. The Millennium hurling final in 2000 was no differemt. The final was essentially a repeat of the Leinster final with Kilkenny taking on Offaly. Kilkenny were playing in their third consecutive All-Ireland final but hadn't won the title since 1993. The game was a walkover for Kilkenny who scored 5 goals against Offaly. The final effectively marked the end of the great Offaly team of the 1990s.
