Yellowman (confectionary)

Yellowman is a chewy toffee produced in Northern Ireland.
Yellowman is sold in non-standard blocks and chips and is associated with the Ould Lammas Fair in Ballycastle, where it is sold along with other confectionary and often dulce. It is similar to honeycomb, except that the more solid 'rind' usually consists of at least half the quantity. The rind is hard, having a similar consistency to rock.
The primary ingredients are golden syrup, brown sugar, butter, vinegar and baking soda. The ingredients are boiled together, and the honeycombed bubbles are formed by the reaction of the addition of the baking soda to the vinegar in common with honeycomb. The mixture is then left to cool and harden, and is broken into pieces with a toffee hammer.
