I thought the actual setup to the punchline was that he's showing off all of his amps, and then singles out one of them as being very special - because its dial goes up to eleven, making it louder than all the others. I.e. it's just the one amp that goes up to 11, not all of them. In fact, he's very possessive of this amp, and doesn't want the interviewer to touch it or point at it or even look at it.
