In addition to coursework, students are required to attend stages throughout Europe and the world. A stage is defined as regional or thematic in focus. This means the students are studying a specific food item and its full range if it is thematic. Regional is an in depth look at a particular region that is gastronomically dense and diverse. It is this experience that enriches the students classroom education and is unique to a university curriculum.
