Genetically modified (GM) foods are those that have been created by inserting the genes from one species into the DNA of another in order to confer certain characteristics on the target organism. To some, especially those making a hefty profit from their sale, the resulting edibles are wondrous “designer foods,” a name that conjures up pleasing images of well-coiffed cabbages and stylish strawberries. But to others, GM eats are unholy “frankenfoods” creating carnage from coast to coast. Which image is more accurate depends, of course, on science. And lately that science says GM foods are a monster that should be left locked in the lab and not put on a plate.
