The Pancakes is a Hong Kong based one-girl band consisting of independent singer-songwriter Dejay. The music of the Pancakes is characterized by Dejay's very innocent, almost child-like voice with bright and catchy melodies. Along with ketchup, the Pancakes is one of the very few singers/bands in Hong Kong who produce most of their songs in English language.

Dejay is the only member of the band. She graduated from the University of Hong Kong as a Translation major. Her real name is unknown to the public. Before working full time as a singer, she worked in the Library of the Goethe-Institut (the German cultural centre) in Hong Kong. As the only member of the one-girl band, Dejay handles almost everything by herself in the production of her albums. From musical composition, lyrics writing, instruments performance singing, recording, production to sound engineering, etc. She even established her own independent record label – Rewind records. Dejay plays various musical instruments such as the guitar, keyboard and drum, although on the stage she usually only plays one of the instruments at a time.

Prior to establishing the Pancakes, Dejay was a member of numerous independent bands including The Postcard (in 1996, a 3 members band) , Ginger Biscuits (in 1997, one-girl band) and Tricycle Rider (in 1999, a 3 members band).

Her song, gum gum gum (咁咁咁), written for the film McDull, Prince de la Bun won the 24th Hong Kong Film Awards as "the Best Original Film Song".

  • Her works sometimes are credited as Dejay Choi, especially when her songs are covered by other singers.
  • As Dejay's singing technique somewhat resembles to another indie singer, Ha Kam Shing, a male indie singer who sold his taxis for publishing his albums, Dejay (The Pancakes) was given by certain people a nickname -"the Female Ha Kam Shing".
