Ropa vieja

Ropa vieja, which is Spanish for "Old Clothes," is a popular Caribbean dish consisting of shredded beef (often skirt or flank steak), vegetables, and a sauce. Although ropa vieja has a basic core recipe, the Cuban version varies slightly from the Panamanian version, which varies slightly from the Puerto Rican version, etc.

The origin of ropa vieja is not certain, but most countries that have it believe they originated it. International travelers or internet surfers should not be surprised to see "ropa vieja" listed among "traditional Panamanian cuisine" as well as "Cuban dishes" and "Dominican Food." It is always safe (and best) to refer to ropa vieja as a "Caribbean dish."
