A polyunsaturated fatty acid (PUFA) is a class of unsaturated fat that contains more than one double bond.
- omega-3 fatty acids:
- alpha-linolenic acid (18:3)
- stearidonic acid (18:4)
- eicosatetraenoic acid (20:4)
- EPA (20:5)
- DHA (22:6)
- omega-6 fatty acids:
- linoleic acid (18:2)
- gamma-linolenic acid (18:3)
- dihomo-gamma-linolenic acid (20:3)
- ARA (20:4)
