Moretum

From Wikipedia, the free encyclopedia

Moretum is a sort of Ancient Roman dish. It is often translated into English as salad, but it is quite different.

A typical moretum was made of herbs, fresh cheese, salt, oil and some vinegar. Optional there could be added different kind of nuts. The contents were crushed together in a mortar, hence the name. Moretum was eaten with bread.

A recipe can be found in the poem of the same name in the Appendix Vergiliana (it is often, though uncertainly attributed to Vergil).

De Re Rustica, book XII of Columella contains further recepies of moretum, the one with pine nuts is very similar to modern pesto.
