Matzo brei

From Wikipedia, the free encyclopedia

Matzo brei (Hebrew: מצה מטוגנת, translit.: Matza metugenet) is a form of matzo fried with egg. There are numerous recipes for this dish, some may be based on, but not necessarily, the dry matzo being softened (but not made soggy) by running under hot water (some use milk), being broken into small pieces, mixed with egg (approximately one egg per sheet of matzo) and fried in butter. While fried it may be formed into a pancake, or kept broken into many small pieces. Salt may be added, and it may be cooked omelette style with meat and other foods, or it may be topped with sauces such as apple sauce, salsa, or preserves. Some eat it with sugar or jelly.

The dish emerged from Passover, where only unleavened bread is permitted.
