Liquid silicon dioxide

Liquid silicon dioxide is commonly used as a clarifying agent in the production of wine or other fermented beverages. Commercial names for the substance include Kieselsol, Siligel and others. Often the liquid silicon dioxide is used in conjunction with gelatin to enhance the clarifying action. Liquid silicon dioxide works by binding to proteins, making the particle too heavy to stay in suspension. The particles fall to the bottom of the vessel, leaving clarified wine above.
