Khoya

From Wikipedia, the free encyclopedia

Khoya (or "mawa") is a common ingredient in many traditional Indian sweets like Gulab jamun, and sometimes even in some spicy dishes. When milk is slowly evaporated under heat, it eventually becomes solid, which is called khoya.

An alternative to khoya is chhena or paneer, which is also made from milk after removing liquid, but the separation is done chemically by adding lime juice etc for coagulation, and not using heat.
