Kappamaki

Kappamaki (Japanese:カッパまき) is a type of Japanese sushi roll that is made from cucumber, rolled with vinegared rice (shari) and nori to make a maki, or sushi roll. It is simple to make - see external links for a recipe. It is named after the Japanese legendary creature, the kappa, because it is believed that kappa are fond of cucumbers. Legend has it that carving one's name on a cucumber, then casting it into kappa-infested waters, will appease the kappa and allow the person whose name is written on the cucumber to swim safely.
