Gerber sandwich

Gerber sandwich or "Famous Gerber sandwich" is an open faced sandwich popular in St. Louis, Missouri. The Gerber consists of a half section of Italian or French bread, spread with butter, and topped with garlic, ham, Provel or Provolone cheese and seasoned with a sprinkling of paprika and then toasted.

Gerber sanwiches are the second most common hot food associated with Provel after St. Louis-style pizza. More commonly available sliced cheeses such as mozzarella slices, white American cheese, or the more flavorful provolone may be used to create something similar to this St. Louis favorite anywhere.
