Flying Star is a privately owned and operated fast food restaurant chain in Albuquerque, New Mexico.

Flying Star's first location was opened in 1987 on Central in the Nob Hill area of Albuquerque, across from the UNM campus. This original location was actually a francise of the San Francisco chain Double Rainbow and did not have the full menu that modern Flying Stars now have. The owners of the then Double Rainbow kept expanding their menu by adding more baked goods, drinks and meals, until their cafe barely resembled other "Double Rainbows". At this point, unsatisfied with the support they received from Double Rainbow, the owners cut ties with Double Rainbow and renamed their restaurant chain Flying Star.
Since 1987 Flying Star has expanded to 6 locations in the Albuquerque metro area and has become a fixture of the town. All of the restaurants are often packed with neighborhood locals, students from nearby high schools or UNM, dog lovers (in locations with "Petios") and people just in search of good food.[citation needed]
