Disodium glutamate (DSG, Na2C5H7NO4) is a salt formed by sodium and glutamic acid.

When MSG is put into an alkaic environment, MSG is neutralized by the alkaline. In the presence of sodium ions, this reaction will form DSG. In this reaction, a sodium ion replaces hydrogen on the second carboxyl group in glutamic acid.

DSG has an odor of ammonia.
