Dahi
From Wikipedia, the free encyclopedia
Dahi (Hindi and Urdu), doi (Bengali), Perugu (Telugu) or Thayir (Tamil) is naturally cultured plain yoghurt widely consumed all over South Asia. It is consumed in a variety of ways: plain, as a shake (lassi), a kind of dip (raita), a dessert (mishti doi), with rice (bagala bhath -- thayir-sadam -- mosroo-anna), and so on. It is also a very common ingredient in many recipes, as a souring agent (especially in Marwari cuisine), or as a base for marinades.
