Croquembouche

A croquembouche is a French dessert often served at weddings. Constructed of cream-filled choux buns towering in a conical shape, bound together with carmellized sugar, and usually decorated with threads of carmellized sugar, chocolate, flowers, or ribbons. The name comes from the French words 'Croque en bouche' meaning 'crunch in the mouth'.

The choux buns can also be made with savoury fillings.

Alternative spellings include croquenbouche, and croquebouche. It is sometimes also called "Pièce montée".
