Cotswold cheese

English Cotswold is a variation of Double Gloucester cheese to which chives have been added. The chives add a savory and pungent flavor to the creamy cheese. Cotswold pairs well with beer, and is thus considered a "pub cheese". It also melts well, similarly to cheddar, and is often served melted on slices of bread.
