Colby-Jack, or Cojack, is an orange and white marbled cheese produced from a mixture of Colby and Monterey Jack. The cheese has a semi-hard texture. The flavor of Colby-Jack ranges from mild and mellow, to lightly sweet, to sharp and tangy.

The early 20th-century pitcher Jack Coombs, who hailed from Colby College, was widely known as "Colby Jack Coombs". It is not known if this nickname was a pun on the cheese, or even if colby-jack cheese was widely available at that time.
