Chihuahua cheese

Chihuahua cheese is a white cow's-milk cheese of Mexican origin available in braids, balls or rounds. Asadero, which means "roaster" or "broiler," has favorable melting properties and becomes softly stringy when heated--very similar to unaged Monterey jack cheese.
It is also called queso menonita, after the Mennonite communities of northern Mexico that first produced it. This cheese is now made by both Mennonites and non-Mennonites throughout the country.
Contrary to popular belief, the cheese is named after its place of origin, the Mexican region of Chihuahua, not because it is usually made from the milk of a dog.
In some locations, especially at Mexican restaurants in the midwest, the cheese is pronounced "chi-huah-huah." It is not preferred by many midwesterners, especially on enchiladas.
