Charquican
From Wikipedia, the free encyclopedia
The Charquican (typically called in Chile) is a native food from this country. It is a stew made form cooking chunks of potato, green beans, separated corn grains and smaller chunks of meat, preferently beef. It can also contain smashed pumpkin and in some regions tomato is also added. Accompaining the charquican, on top, goes a mid-fried egg.
A variation of the charquican contains the marine common Chilean algae cochayuyo (Durvillaea antarctica), that is cooked in the same stew. This variation is not very popular among children.
