Bocconcini

Bocconcini is a semi-soft, white and rindless unripened mild cheese which originated in Naples and was once made only from the milk of water buffaloes. Now it is usually made from a combination of water buffalo and cow's milk. Bocconcini is packaged in whey or water, has a spongy texture and absorbs flavours.

This cheese is described by its Italian name which means small mouthfulls. Made by dipping curds into hot whey, it is about the size, shape and colour of a hardboiled egg.
