Bacon grease

Bacon grease, also known as the drippings is the grease created as the by product of cooking bacon. When bacon is cooked the heat causes the fats naturally on it to melt becoming highly flavorful grease. Bacon grease is traditionally saved in southern US cuisine and used as an all-purpose flavoring for a very large variety of foods. It is used for everything: from gravy for corn pone to dressing for salads.
One tablespoon (0r 4 grams) of bacon grease has 38 calories [1]. It is composed almost completely of fat, and contains almost no nutritional value aside from the aforementioned fat. One half of bacon grease is composed of saturated fats, so it is considered rather bad for one's health. Despite the health consequences of bacon grease consumption, it still remains quite popular in the American South.
