Aviyal

Aviyal(in Malayalam അവിയല്‍) is a dish that has a unique place in a typical Kerala Cuisine. It is a thick mixture of a lot vegetables, curd and coconut. It is seasoned with coconut oil and curry leaves.

Aviyal is considered an essential part of the Sadhya.

Common vegetables that are used to make aviyal are yam, plantain, drumsticks, carrots etc. Some people prefer to substitute curd with raw mango or tamarind pulp. This dish can be made into a gravy and eaten with rice or be made into a semi-solid side dish. The word "aviyal" is also used to denote an assortment or a mixture - this sense being derived from the way the dish is made.

Ingredients

Vegetables - 3/4 kg Drumstick, Brinjal,Yam,String beans, Raw plantain,Ash gourd,Ridge gourd.

  • Turmeric powder - 1/2 teaspoon
  • Red chilli powder - 1/2 teaspoon
  • Green chillies - 6-8 numbers
  • Onions - 2 large
  • Grated coconut - 1 cup
  • Tamarind paste - 1 tablespoon
  • Oil - 2 tablespoons
  • Curry leaves - 5-6 numbers

Preparation

  • Peel and cube the vegetables.
  • Slightly boil the drum sticks with salt.
  • Grind the coconut to a fine paste.
  • Boil some water and add cubed vegetables to it.
  • Add the red chilli and turmeric powders.
  • When the vegetables are almost cooked add green chillies and salt.
  • Add the tamarind extract and coconut paste.
  • Simmer on a low flame for 15 minutes.
  • Heat oil in a small pan and add the curry leaves.
  • When the leaves change colour pour over the cooked vegetables.
