Abertam cheese

Abertam cheese is a hard cheese made of sheep's milk that takes around 2 months to ripen. It is made in Karlovy Vary, a well-known spa city in the Czech Republic. Abertam cheese comes in an irregular spherical shape, and has a thin yellow or orange rind. It is often eaten by itself, but is often melted and used in regional dishes.
