First off, if something is NPOV, you revert it whenever you find it, following multiple edits by newbies or not. Secondly, you don't sound that much like a newbie from the above-- it's easy for someone to pose as a newbie by not creating an account, especially if they don't have a fixed IP. All that aside, your explanation above is reasonable. A suggestion-- whenever you plan to remove an substantial amount of otherwise reasonable looking material, put a note on the article's talk page explaining what you are doing and why. And in general, it's a real good idea to fill in the edit summary on every edit with a quick statement on what you're doing.
Another thing-- you shouldn't add Category:Irish-Americans to an article that already has an Irish-American category like Category:Irish-American politicians, because the latter category already belongs to the former, making the more generic category redundant.
